Not just opened to hotel guests the “De Carmine” restaurant is something we pride ourself on.
Our cuisine,mainly based upon fish dishes gets its roots back to the healthy and renowned “Mediterranean Diet”, finding its origins in this proper land, the “Cilento”.
Here are in synthesis the key-principles of the Mediteranean Diet, therefore adopted by our restaurant:

  • Saturated fats use limiting (Beef, Pork, Lamb, cold cuts, Margarine, cooking and dairy fats.)
  • Vegetable oils pursuing instead of solid fats for a 70% decrease of the global caloric intake.
  • Great use of fresh vegetables,legumes, fruit and fat-free dairy products.
  • Immoderate use of salt or sugar avoidance.
  • Open air walks and exercise.
  • Stress avoidance.
  • Chocolate consuming, even if moderately.
